Haricots Verts with Barhi Dates

In this recipe, dates give an alluring and satisfying flavor to the beans.

Serves 4-6

Ingredients

  • 1 pound haricots verts trimmed

  • 1/2 cup Barhi or Deglet Noor dates pitted and sliced into thin slices

  • 2 cloves garlic coarsely chopped

  • 4 tablespoons extra-virgin olive oil

  • 1 tablespoon unsalted butter

  • Sea salt and freshly ground black pepper

Instructions

  • Bring a large pot of salted water to a boil. Add the beans and cook for approximately 4 minutes. Drain the beans and run them under cold water. Set aside.

  • In a large pan over medium-low heat, add the olive oil and garlic, stirring frequently for 1 minute. Add the butter to the pan and then add the dates. Cook for approximately 3-4 minutes. Reduce the heat to low, season with salt and pepper and continue cooking, stirring often, about 6-7 minutes longer. Taste for seasoning.

  • Transfer the beans to a serving platter and serve right away.
